An Interactive Computerized Kiosk for Assessing Food Safety Knowledge of High School Students and Science Teachers. J. Endres, S. Barter, and T. Welch, Southern Illinois University
The food safety kiosk is a stand-alone, touch-screen computer application, with screen text, graphics and audio. It includes a 10-item food safety quiz involving a "detective theme" with villain, "Sal Monella." The multimedia touch screen kiosk was used to assess food safety knowledge and convey food safety principles to 93 high school science teachers and 165 students. The kiosk program based upon the FightBACTM messages informed users of correct responses and reasons for the response. The program is designed to count correct answers, provide number of attempts at taking the quiz, and the number of times a particular question was answered incorrectly. Teachers correctly answered more questions than students; however, for the areas of hand washing, sources of foodborne illness, and handling of leftover foods, at least 40% of both students and teachers provided incorrect answers.
