Exposure Assessment for Salmonella in Broilers. L. A. Kelly, W. Anderson, A. M. Lammerding, and A. Fazil; Veterinary Laboratories Agency, Surrey, UK, Food Safety Authority of Ireland, Dublin, Ireland, and Health Canada, Ontario

To date, no full farm to fork exposure assessments have been developed for Salmonella in broilers. This is largely due to the limited amount of quantitative data available to describe changes in the levels of contamination from primary production of broilers through to final consumption. As a result of this limitation, the WHO/FAO exposure assessment for this pathogen/commodity combination provided a systematic analysis of available data and outlined the ways in which such data was suitable or unsuitable for farm to fork modelling. In addition, recommendations for future data collection, both at national and international levels, were outlined. Finally, a quantitative model that commences at the end of processing was developed. This paper outlines the findings of the exposure assessment work and highlights the main areas where further research is required before modelling in this area can progress.
